  1. Preheat oven to 400°F
  2. Combine bread crumbs, Chia seeds, cilantro, olive oil, lemon zest, pepper and salt (if using) in a bowl and mix well.
  3. Place haddock filet on parchment paper in baking pan and spoon bread crumb Chia seed mixture over fish.
  4. Bake for 20-22 minutes.
  5. Serve with pasta salad or green salad.
