White Chocolate Cranberry Bars

  1. Preheat oven to 350°F. Place parchment paper in the bottom of an 8″ x 8″ pan. Grease side of pan and parchment paper with a bit of olive oil.
  2. Beat egg, butter, sugar and vanilla in a mixing bowl.
  3. Add flour, baking powder and salt to mixing bowl and beat until well blended.
  4. Stir in 1/2 cup white chocolate chips and 1 cup fresh cranberries. Batter will be sticky.
  5. Press mixture into pan.
  6. Bake for 30-33 minutes.
  7. Let bars cool completely. In the meantime, melt 1/2 cup white chocolate chips over low heat.
  8. Drizzle melted white chocolate over bars and let bars sit for a few minutes.
  9. Slice bars into squares, cleaning knife frequently to ensure clean edges.
  10. Store bars in airtight container.
